DOC CESANESE - OLEVANO ROMANO
Kone comes from “Cone”, a dialectal term used to describe the “shrines” that were located along country roads and served as a gathering place for the community. The same term was also used to refer to the undulating hills of the territories where our Cesanese wine is produced.
Intense ruby hue that tends to garnet with aging. The Kone offers fine aromas mostly of black cherry, accompanied by a bouquet of ripe red fruits. The perfectly integrated tannins alternate with sharp bloody scents that evolve into warmer and softer tones with aging in the bottle. A wine that tells the story of the territory in all its complexity.

It is particularly suitable with red meats and aged cheeses.
The grapes, harvested in the early hours of the morning, are destemmed and sent to stainless steel fermentation vats. The alcoholic fermentation takes place with selected yeasts and the contact with skins lasts for about 25 days. The macerating skins are delicately managed with frequent pumping over and delestage, favoring an extraction that enhances the structure, meanwhile maintaining an intense and delicate aroma. The refinement takes place for a minimum of 18 months and 6 in the bottle.
